Assemble up to a day ahead, refrigerate without the topping, and add 10 minutes to the bake. Add the crumb just before it goes in.
If the sauce looks too loose before baking, trust it — it thickens considerably in the oven. A sauce that looks right in the pan will be stodgy on the plate.

Thin layers, restrained sauce and a béchamel made properly. The failure mode is always the same — too much filling, not enough patience, and a slice that slides apart on the plate.
Milk before tomato, white wine rather than red, and three hours at a bare blip. A real ragù is a meat dish loosened with tomato, not a tomato sauce with mince in it.
