Cold beer, and open it just before mixing. Flat, warm beer makes a noticeably denser batter.
The cornflour is what keeps the coating light and shattering rather than chewy. Do not swap it for more plain flour.
If they need to wait, a rack in a 120°C oven holds them for about 15 minutes. Any longer and you may as well have baked them.

Started in cold water, dried in the pan, and finished with warm milk. Gluey mash is not a potato problem — it is a temperature and a technique problem.
