The butter-to-hot-sauce ratio is roughly 2:3 by volume and it is the only thing you need to remember. More butter makes it milder and richer; more sauce makes it sharper and thinner.
Frank's is the original — it was the sauce used in Buffalo in 1964. Any cayenne pepper sauce works, but a habanero or chipotle sauce makes something else entirely.
No blue cheese in the house: soured cream with lemon and a lot of black pepper is not traditional but does the same cooling job.

Reduced until it mounds on the spoon rather than running off it. The name promises mess, but a sloppy joe that soaks through the bun before you lift it has been undercooked.
