Cook’s notes
Traditionally there is no balsamic vinegar in a caprese. If you want it, use a thick aged glaze sparingly — a thin harsh vinegar will overwhelm the mozzarella entirely. Buffalo mozzarella is richer and more sour; fior di latte is milder and holds its shape better on the plate. Both are correct. Never refrigerate the assembled salad. Twenty minutes in the fridge undoes the half hour you spent bringing it to temperature.
