Cook’s notes
Use rolled oats, not instant. Instant oats are pre-cooked and turn to paste; steel-cut are excellent but need 25–30 minutes and more liquid.
For overnight oats, use the same ratio cold with yoghurt instead of cooking, and leave it in the fridge overnight.
Oat milk makes it vegan and, because of its own starch, arguably creamier than dairy.
