Guanciale (cured pork cheek) is the traditional choice and worth seeking out; pancetta is the common substitute, and bacon works in a pinch though it brings a smokiness that isn't traditional.
If the sauce does scramble, it's almost always because the pan was too hot when the eggs went in. There's no fixing it once it happens — better to start again than eat scrambled egg spaghetti.
Never add cream. It's not a regional variation; it's a different, worse dish wearing the same name.

Thin layers, restrained sauce and a béchamel made properly. The failure mode is always the same — too much filling, not enough patience, and a slice that slides apart on the plate.
Milk before tomato, white wine rather than red, and three hours at a bare blip. A real ragù is a meat dish loosened with tomato, not a tomato sauce with mince in it.
