Baby backs are leaner and quicker; St Louis-cut spare ribs are fattier, meatier and want an extra 45 minutes. Both work with this method.
The glaze only goes on at the end. Sugar burns long before three hours are up, and ribs glazed from the start come out black and bitter.
The bend test matters. Fall-off-the-bone is a sign you went too far — properly cooked ribs give cleanly when bitten and still hold together on the plate.
