Chuck at around 20% fat is the right mince. Steak mince is leaner and makes a dry burger no matter how carefully you cook it.
This is a different animal from a smash burger. There the whole point is maximum crust on a thin patty; here it is a juicy pink middle, and the two techniques work against each other.
If you are cooking for anyone who needs their beef well done, make them a smash burger instead. A thick patty cooked through is a poor thing.

Eight minutes in the pan, and most of the work is standing the chops on their fat edge first. Render that strip properly and the whole dish tastes better.
