Low-moisture mozzarella, not fresh. Fresh buffalo mozzarella releases far too much water over forty minutes and turns the base to soup.
This is not a Neapolitan pizza made thicker — it is a different dish entirely, closer to a savoury pie, and judging it against a 90-second Naples pizza misses the point of both.
The tin matters. A 23 cm cake tin with straight sides gives the proper deep wall; a sloped dish gives you a large flat pizza with a sad rim.

A larger, thinner, foldable slice with a cooked sauce and low-moisture mozzarella. Use cup-and-char pepperoni and it curls into little pools of paprika oil.
