Precooking the apples is the step people skip and then wonder why there is a gap between the filling and the lid. Raw apples shrink in the oven; the pastry does not.
Bramleys alone turn to sauce and eaters find nothing to bite. An eating apple alone stays crunchy and tastes underdone. Use both.
A metal or ceramic dish browns the base far better than glass. If you only have glass, give it the first 20 minutes on a preheated baking sheet.
