Cook’s notes
Cut the top pastry sheet into 12 portions before you lay it on. Trying to cut it in place shatters it and pushes the custard out of the sides, which is how most home attempts end up looking.
It genuinely needs the overnight chill. A 4-hour slice will taste right but will slump on the plate.
Known as kremšnita in Croatia and Slovenia, krémeš in Slovakia and krémes in Hungary — this is the Bled version, which uses whipped cream as a separate layer rather than folding it all into one.
